Recipe - Fresh Tuna Spring Rolls

Tuna Spring RollA popular twist on a favourite- Try these tuna spring rolls for lunch.

Serves: 4-5 (makes 10)

Ingredients

2 x 100g SAFCOL Tuna Pouch in Sweet Chilli Sauce
40g rice vermicelli
10 rice wrappers
1 tablespoon fresh basil leaves
3 tablespoons fresh chopped mint leaves
3/4 cup carrots, julienned
1 cup shredded lettuce
Hoi Sin or sweet chilli sauce

Method

1. Place rice vermicelli in boiling water. Let soak 4 - 5 minutes until soft. Drain and rinse in cold water.

2. Fill a large shallow bowl with hot water.

3. Dip 1 rice wrapper quickly to soften. 1 - 2 seconds.

4. Lay wrapper flat and put desired amounts of vermicelli, carrots, lettuce, tuna, basil and mint in the centre. Roll the edges inward and beginning at the bottom of wrapper, roll tightly.

5. Dip into sauce as desired. Enjoy.

Tips

You can make these ahead of time, keep moist by wetting a piece of kitchen paper or store in air tight container and take to work for lunch.
