Recipe - Scrambled Eggs & Salmon

Salmon & Scrambled eggsGet the girls around for brunch- this is sure to delight!

Serves: 2
Preparation Time: 10 min

Ingredients

1 x 100g SAFCOL Salmon Pouch with Mild Chilli
4 large eggs
2 teaspoons of milk (low fat can be used)
1 tablespoon butter
1 teaspoon olive oil
Chopped chives to garnish
Salt & Pepper to taste

Method

1. Whisk the eggs together with milk to an even consistency.

2. Melt butter and oil in a pre-heated non-stick frying pan. When the butter is melted add the egg mixture. as the eggs start to set push the mixture toward the centre of the pan.

3. Add the salmon before the scrambled eggs are ready to be turned and cook for a further 30 seconds.

4. Serve with toasted bread slices and cooked tomato.
